This dish is a beloved staple in many Hispanic households, known for its warm and hearty flavors. This version adds a zesty twist to the traditional recipe.

Ingredients:

For the Meatballs:

  • 1 lb ground turkey (or chicken)
  • 1 egg
  • ¼ cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped
  • Zest of 1 lime (for a zesty twist!)
  • Salt and pepper to taste

For the Soup:

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 3 Yukon gold potatoes, quartered
  • 2 zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 cup fresh or frozen corn
  • Juice of 1 lime
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions:
