This week, I’m excited to share a refreshing and vibrant Greek Salad recipe inspired by @healthymoodsf on Instagram. This salad is perfect for those hot summer days when you crave something light yet flavorful.
Ingredients:
2 large Tomatoes
1 Bell Pepper
3 Persian Cucumbers
1 small Red Onion
1/4 cup Kalamata Olives
1/2 cup Feta (chunks or crumbled)
1/4 cup Castelvetrano Olives
Large handful Fresh Parsley, choppedDressing:
1/3 cup olive oil
1 tablespoon Za’atar
1 tablespoon oregano
Salt and pepper to taste
Instructions:
- Prep the Vegetables: Start by washing all your vegetables thoroughly. Then, chop the tomatoes, bell pepper, cucumbers, and red onion into uniform, bite-sized pieces.
- Assemble the Salad: Place the chopped tomatoes, bell pepper, cucumbers, red onion, Kalamata olives, and Castelvetrano olives into a large mixing bowl.
- Add the Feta and Parsley: Crumble or chop the feta into chunks and add to the bowl. Sprinkle the chopped parsley over the salad.
- Make the Dressing: In a small bowl, whisk together the olive oil, za’atar, oregano, salt, and pepper until well combined.
- Dress the Salad: Pour the dressing over the salad ingredients in the large bowl.
- Toss to Combine: Gently toss everything together until the salad is well-coated with the dressing.
- Serve and Enjoy: Serve immediately and enjoy the fresh, vibrant flavors of this Greek Salad.
