Celebrate National Tequila Day with a Pineapple Jalapeño Margarita!

Pineapple Jalapeño Margarita Recipe

Hey they, Jermaine Antonio here! 🍹 Happy National Tequila Day! What better way to celebrate than by mixing up a refreshing margarita with a little twist? Today, I’m sharing my Pineapple Jalapeño Margarita recipe that’s sure to be a hit at any summer gathering.

Ingredients:

  • 2 oz tequila
  • 1 oz triple sec
  • 1 oz fresh lime juice
  • 1 oz pineapple juice
  • 2-3 slices of fresh jalapeño (adjust based on your spice preference)
  • Pineapple wedges for garnish
  • Salt for rimming the glass (optional)
  • Ice

Instructions:

  1. Prepare the Glass: If you like a salted rim, run a lime wedge around the edge of your glass and dip it into a plate of salt. Set aside.
  2. Mix the Margarita: In a cocktail shaker, combine the tequila, triple sec, lime juice, pineapple juice, and jalapeño slices. Fill the shaker with ice.
  3. Shake it Up: Shake vigorously for about 15-20 seconds until the mixture is well-chilled.
  4. Serve: Strain the margarita into your prepared glass over fresh ice.
  5. Garnish: Garnish with a pineapple wedge.
  6. Enjoy: Sip and enjoy the perfect blend of sweet, tart, and spicy flavors!

Final Salad Sunday: Vibrant Moroccan Beet Salad

Hi there, Jermaine Antonio here! It’s bittersweet to announce that today marks the final Salad Sunday. Over the past month, I’ve loved sharing my favorite salad recipes with you, & we’re wrapping up this delicious journey with a vibrant and nutritious Moroccan Beet Salad. This colorful dish is perfect for adding a refreshing touch to any meal. Let’s dive into the recipe!

 

Ingredients:

  • 5 medium-sized beets, tops removed
  • 1 red onion, cut in half and thinly sliced
  • 1 tbsp olive oil
  • 1/4 cup freshly squeezed orange juice
  • 1 tbsp orange zest
  • 2 tsp cumin
  • 1 tsp salt
  • 1/4 cup fresh mint leaves, packed
  • 1/4 cup fresh cilantro leaves, packed

Instructions:

  1. Cook the Beets: In a large pot, bring enough water to cover the beets to a boil. Add the beets and allow them to simmer until they’re tender enough to be pierced with a fork, about 35-40 minutes. Remove the beets from the pot and let them cool completely. Under cold running water, peel the beets using a peeler. Cut the beets into 2-inch pieces and set them aside.
  2. Prepare the Dressing: In a small bowl, combine the orange juice, orange zest, olive oil, cumin, and salt. Stir well until everything is mixed together.
  3. Assemble the Salad: In a large bowl, add the cooked beets, fresh mint, fresh cilantro, and sliced red onions. Pour the dressing over the salad and toss until everything is well coated. Top with additional fresh herbs if desired.

Storage Tip: Without the fresh herbs, this salad stores well in the refrigerator for up to 5 days, making it a great make-ahead option for the week.

Salad Sunday: Greek Salad

Hi there, Jermaine Antonio here! Welcome back to another edition of my Salad Sunday Series. This week, I’m excited to share a refreshing and vibrant Greek Salad recipe inspired by @healthymoodsf on Instagram. This salad is perfect for those hot summer days when you crave something light yet flavorful.

 

 

Ingredients:
2 large Tomatoes
1 Bell Pepper
3 Persian Cucumbers
1 small Red Onion
1/4 cup Kalamata Olives
1/2 cup Feta (chunks or crumbled)
1/4 cup Castelvetrano Olives
Large handful Fresh Parsley, chopped

Dressing:
1/3 cup olive oil
1 tablespoon Za’atar
1 tablespoon oregano
Salt and pepper to taste

 

Instructions:

  1. Prep the Vegetables: Start by washing all your vegetables thoroughly. Then, chop the tomatoes, bell pepper, cucumbers, and red onion into uniform, bite-sized pieces.
  2. Assemble the Salad: Place the chopped tomatoes, bell pepper, cucumbers, red onion, Kalamata olives, and Castelvetrano olives into a large mixing bowl.
  3. Add the Feta and Parsley: Crumble or chop the feta into chunks and add to the bowl. Sprinkle the chopped parsley over the salad.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, za’atar, oregano, salt, and pepper until well combined.
  5. Dress the Salad: Pour the dressing over the salad ingredients in the large bowl.
  6. Toss to Combine: Gently toss everything together until the salad is well-coated with the dressing.
  7. Serve and Enjoy: Serve immediately and enjoy the fresh, vibrant flavors of this Greek Salad.

Celebrate National Mac & Cheese Day with The Ultimate Comfort Food Recipe!

Mac & Cheese

Hi there! It’s Jermaine Antonio here, your trusted Greater Palm Springs Realtor, trained chef, and makeup artist. Today, I’m excited to share one of my all-time favorite comfort foods in honor of National Mac & Cheese Day. This recipe is based on the original by The Danni Rose on YouTube, and it’s absolutely delicious!

Ingredients:

  • 32 oz chicken stock
  • 3 1/2 cups elbow pasta
  • 8 cups of cheese of choice
  • 2 cups whole milk
  • 1 1/2 cup heavy cream
  • 3 eggs
  • 3/4 cup sour cream
  • Seasonings such as paprika, salt, and pepper
  • 1 stick of butter

Directions:

  1. Boil your noodles in your chicken stock then drain. (Reserve a cup of the boiling liquid.)
  2. Add pasta back into your pot, then add the butter and sour cream. Season to taste.
  3. Fold in your cheeses. (Reserve 2 cups of cheese for topping)
  4. Layer your mac & cheese mixture and “custard”, (whisked heavy cream and eggs), in a baking dish.
  5. Sprinkle the final layer of shredded cheese on top, creating a golden crust that adds an irresistible crunch to every bite.
  6. Preheat your oven to 375°F (190°C) and bake for 40-45 minutes.
  7. Let cool/set for 20-25 minutes.
  8. SERVE & ENJOY!

Salad Sunday: Veggie Noodle Salad with Peanut Dressing

Hi there, Jermaine Antonio here. Welcome back to another Salad Sunday! Today, I’m excited to share a fresh and vibrant recipe that’s perfect for summer: Spiralized Veggie Noodle Salad with Peanut Dressing. This colorful, crunchy salad is not only delicious but also Instagram-worthy!!! Let’s dive into the ingredients and instructions. 

Ingredients:

  • 2 zucchini, spiralized
  • 2 carrots, spiralized
  • 1 red bell pepper, julienned
  • 1/2 cup shredded purple cabbage
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts

Peanut Dressing:

  • 2 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced

Instructions:

  1. In a large bowl, combine zucchini, carrots, bell pepper, cabbage, and cilantro.
  2. In a small bowl, whisk together soy sauce, peanut butter, rice vinegar, honey, sesame oil, and garlic until smooth.
  3. Pour the dressing over the veggie noodles and toss to combine.
  4. Sprinkle with chopped peanuts before serving.

The combination of spiraled veggies and creamy peanut dressing makes this salad a true delight. Plus, it’s super easy to prepare!

Celebrate the 4th of July with My Favorite Festive Cocktail!

Hi there, it’s Jermaine Antonio, your favorite Greater Palm Springs realtor! As we gear up to celebrate Independence Day, I wanted to share a special treat with you all – my favorite 4th of July cocktail. It’s the perfect addition to your holiday festivities and a sure way to impress your guests!

FIRECRACKER

Ingredients

  • 1 1/2 ounces aged rum
  • 1/2 ounce triple sec
  • 1/2 ounce lime juice
  • 1/2 ounce simple syrup
  • cubed watermelon chunks
  • A dash of cayenne pepper – *optional
  • Garnish: lime wedge

Steps

  1. In a mixing glass, muddle the watermelon.

  2. Add remaining ingredients with ice & shake until well-chilled.

  3. Strain into cocktail glass.

  4. Garnish with a wedge of lime.

Salad Sunday: Rainbow Fruit Salsa with Cinnamon Chips Recipe

Rainbow Fruit Salsa with Cinnamon Chips

 

Ingredients:

• 1 cup diced strawberries
• 1 cup diced mango
• 1 cup diced kiwi
• 1 cup diced pineapple
• 1 cup blueberries
• 1 tablespoon fresh mint, chopped
• 1 tablespoon honey
• Juice of 1 lime
• 8 flour tortillas
• 1/4 cup melted butter
• 2 tablespoons cinnamon sugar

(I also added powdered sugar for easier coating)

 

Instructions:

1. In a large bowl, combine strawberries, mango, kiwi, pineapple, blueberries, mint, honey, and lime juice. Toss to combine.
2. Preheat oven to 350°F (175°C).
3. Brush tortillas with melted butter and sprinkle with cinnamon sugar. Cut into triangles.
4. Bake for 8-10 minutes or until crispy.
5. Serve the fruit salsa with cinnamon chips.
